Turkey with Latin rub and Pistachio crust

Ingredients: 
1 (6 to 8) pound turkey breast, remove bones
1 cup Latin Spice*
1/4 cup chopped cilantro
1/4 cup chopped flat parsley
3 tbs chopped lemon thyme
1 tb sea salt
1 tb fresh pepper
1/2 cup pistachios
1/2 cup butter
Latin Spice
4 Tablespoons Garlic powder
4 Tablespoons Onion powder
2 Tablespoon Paprika
4 Tablespoon Chili Powder
2 Tablespoon Cumin

Preheat the oven at 350 degrees F.
Place the butter, herbs and pistachios in a food processor until smooth.
Place the herb/butter mixture in between the skin and the flesh, making sure to cover the entire breast.
Season the breast with the Latin Spice, salt and pepper.
Cover loosely with aluminum foil for 1 1/2 hours then uncover until cooked through and golden brown.
Place the breast in a rack inside a roasting pan and bake for 2 to 3 hours or until the internal temperature reaches 180 degrees (this will depend on the size of the breast and the oven used).
Once the breast is cooked, remove from the oven and let rest for 5 to 10 min. Slice and serve.

Oven Roasted Turkey Breast with Latin Rub, Mixed Herbs and Pistachio Crust

1 6 to 8 lb turkey breast
1 cup Latin Spice (below)
1/4 c chopped cilantro
1/4 c chopped flat parsley
3 T chopped (lemon) thyme
1 T salt
1 T fresh pepper
1/2 c pistachios
1/2 c butter


Latin Spice
4 T garlic powder
4 T onion powder
2 T paprika
4 T chili powder
2 T cumin


Preheat the over to 350 degrees.

Place the butter, herbs, and pistachios in the food processor until smooth.

Place the herb butter mixture in between the skin and the flesh, covering the entire breast.

Season the outside with Latin spice.

Place in a roasting pan.  Bake 2 to 3 hours until the internal temperature reaches 180 degrees.

Rest 10 minutes before slicing.

We have done this on the breast of a whole turkey and it worked out great!

Manti Turkey Marinade

1 Cup Soy Sauce
1 c vegetable oil
2 c 7-up
1 t garlic powder
1 1/2 t horseradish

Let meat marinade 24 hours.  BBQ or broil until meat is cooked through.
