2 T yeast
2 c warm water
4 T sugar
Let yeast mix and sit.
Add 2 t salt
2 T oil
4 c flour
Mix and knead. Let rest.
Pull of chunks and roll into a ball. Stretch out. Fry in oil about 1 1/2 inches deep on medium-high to medium heat.
Eat with butter, honey and/or cinnamon sugar.

Individual Cheesecakes-Lani Cordova
1 inner package of graham crackers, crushed
1 cube butter
2 T sugar
Mix and press in bottom of cupcake papers in the pan. Bake for 10 min at 350.
Mix:
1 T flour
2 packages cream cheese
3/4 c sugar
1 T lemon juice
1 t almond flavoring
2 eggs
Put on top of crust in each individual cupcake. Drop a spoonful of jam on top and swirl.
Bake at 350 for 20-25 minutes.

Pulled Pork
4 pounds pork
24 oz root beer
36 oz BBQ sauce
Cook on low in crockpot 6-7 hours.
Drain and add some more BBQ sauce.

4 chicken breast halves
2 15 oz cans black beans, not drained
2 15 oz cans Mexican stewed tomatoes
1 c salsa
4 oz can chopped green chilies
14 oz can tomato sauce
Combine all in slower cooker and cover. Cook on low 8 hours (or less.)
Before serving remove chicken and cut into pieces or shred.
Serve with tortilla chips and cheese.

Italian Beef
4 lb beef roast
12 oz jar of italian giardiniera
12 oz jar pepperocini peppers
1 envelope Italian salad dressing, dry powder mix
10oz can of beef broth
Place everything in a crock pot. Cook on low 6 hours+.
Shred meat and serve on hard rolls or buns.

Puppy Chow

1 box Chex mix
1 c chocolate chips
1 c peanut butter
1 16 oz package of peanut butter
Melt the chocolate chips in the microwave. Add the peanut butter and mix thoroughly. Pour the mixture over the cereal and coat. Put the powdered sugar in a ziploc bag and add cereal mixture and shake thoroughly until the cereal is covered with powdered sugar.

No Bake Cookies
2 cups sugar
1/2 cup milk
1 stick (8 tablespoons) unsalted butter
1/4 cup unsweetened cocoa powder
3 cups old-fashioned rolled oats
1 cup smooth peanut butter
1 tablespoon pure vanilla extract
Large pinch kosher salt
Directions
Line a baking sheet with wax paper or parchment.
Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute. Remove from the heat. Add the oats, peanut butter, vanilla and salt, and stir to combine.
Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes. Refrigerate in an airtight container for up to 3 days.

Porcupine Meatballs
1 lb lean ground beef
1 c uncooked rice
3 T chopped onion

1 T minced garlic

One Dish Chicken and Rice
1 can cream of mushrom soup
1 c water
3/4 c regular white rice
1/4 paprika
1/4 t pepper
4 skinless, boneless chicken breast halves
Mix and then place chicken on top. Bake at 375 for 45 minutes.

Barbecued Spare Ribs
5# Ribs browned on all sides (I often skip the browning)
Put in crock-pot and cover with sauce made of:
2 c ketchup
1/4 c vinegar
1/4 c Worcestershire sauce
3/4 c brown sugar
1 T prepared mustard
salt and pepper
Cook 4 hours.
Can also simmer in 275 degree oven for 4 hours.

Beef Stroganoff
1 pound lean stew meat
1 envelope of Lipton Onion Soup
1 can cream of mushroom soup
1/2 can of water
Mix all ingredients well in a covered casserole dish. Cook 3 hours at 300. Serve over rice, mashed potatoes or noodles.

Green Chili Chicken Enchiladas
This recipe is from our real New Mexico friends who know how to do chilies. Ryan and Heather Jackson (and they are also our Parkinson partners.)
4 chicken breasts, cook and cut up--set aside
1 small onion chopped
2 cloves of garlic
Sautee these in a bit of oil.
Add:
2 cans cream of chicken soup
1 can chicken broth
8 oz sour cream
green chilies (a sandwich ziploc back half full that you grew in your garden and roasted at the Jackson's house--or a can if you don't have this luxury)
Add chicken
Serve on tortillas. Put fold over and add a spoonful on top of the tortilla, and sprinkle with grated cheddar cheese. Then either warm in broiler or microwave to melt the cheese.
So good!

Steak and Stuffing Roll
This is really delicious. We had it today!
1 large boneless round steak
Hammer on both sides with a meat hammer two times.
Spread with a layer of Pepperidge Farm stuffing mix, prepared as directed.
Roll up from short side and tie in three places with string to hold it together while baking.
Cover with a can of Golden Mushroom soup, diluted with one can of water.
Bake at 325 for 2 1/2 hours.

Pancakes and Waffles
I have made this recipe precisely 2,288 times. Emily and Lizzie particularly like this-- and like it A LOT.
2 eggs
2 cups of milk
1/2 c oil, more for waffles
1-2 T baking powder
1 t salt
2 T sugar
2 cups flour, can use half wheat too.
Mix first three, then add dry ingredients. Whisk a lot and then fry up. MMMMM.
We always made pancakes from scratch. I do not know why--probably because they taste way better.
Emily was like 6 and she could make these on her own, because I was not fast enough for her.

Puffy Pancakes
These are also called New York Pancakes and Dutch Babies. We mostly eat them for dinner.
Preheat oven to 425.
Mix 10 eggs
1 c milk
1 c flour
1/2 t salt
Pour batter into 2 buttered 9x13 pans. Bake 17 minutes at 425. Serve with syrup or lemon glaze made out of powdered sugar and lemon juice.

Crepes
I like these because it is one of the things that I remember my dad cooking at home for us. He learned how to make them on his church mission to France.

Hamburger Rice Casserole
Casseroles are sort of out of style, but this is one of those 2 we still fall back on.
Brown 1 pound of hamburger with 1 medium onion chopped
Combine with:

3 cups warm water
Bake at 350 in a covered casserole dish. After 30 minutes take off the cover. Top with chow mein noodles if desired. Bake 15 more minutes.
You can also add a can of water chestnuts, 2 T soy sauce, 2 T brown sugar, 1 small can of mushrooms. You can also bake this inside a pumpkin for a fall treat.

Pepperoni or cooked sausage cut in small pieces.
1 can refrigerator biscuits, pop dough
Cut biscuits into four little pieces each and mix with the sauce mixture. Put into cake pan. Top with mozzarella cheese.
Bake 17-20 minutes.

Spread one side of each ham slice with mustard and mayonaise. Roll each slice around 3 -4 aspargus spears. Toothpick closed if needed. Lay in baking pan.
Top with sauce made of:
6 T butter
1/3 c flour, make paste with melted butter
salt and pepper
2 c warmed milk
Cook together until thickened. Then add:
1 1/2 c grated cheese
6 thinly sliced green onions
Bake at 350 for 20 minutes.
