Caramel-Pecan Roll Caramel

4 c sugar
2 t vanilla
1 c butter
2 c dark corn syrup
1 quart heavy whipping cream, warmed

Butter sides of heavy saucepan.
In it combine sugar, dark syrup, butter, and 1/3 of the cream.  Bring to a boil over low heat.  Stirring constantly, cook to 235 degrees. Add second third of cream and cook to 235.  Add last third of cream and cook to 235.  Add vanilla and pour into pan.
